With humans knowing so very little it is not surprising to learn that not everyone agrees on every aspect of the Old Gods and humanity's place in the world. New translations of old texts, discoveries of ancient artifacts and just better reasoning of evidence causes changes all the time. On top of that people of different lands often have their own interpretation of the same text.

Under many religions there can be only one answer, but those who follow the Old Gods realize that sometimes that answer can mean different things. Thus the Guardians of the Flame collect and organize a great deal of alternate views and beliefs among their great libraries of knowledge.
